Neither are purely good or purely bad, but in the case of birria -- and quesabirria in particular -- i think oiliness can be excused more than greasiness. Quesabirria is the method in which the meat is served with melted cheese on a tortilla.

Me and the wife have been going to crafted on wednesdays for their quesabirria special but it’s always just meh. I really like the quesabirria tacos from the 72nd and giles location.
